We have not fallen off the face of the earth....
Just a quick run down of what has been going on around here:
Jake started basketball so that takes up two nights a week with practice. He has played two games and his team has lost both. The first one was pretty sad 40 to 6 was the score. Yeah, we don't talk much about that one. This last week was better - only lost by 5 points. Final score: 19 to 14. I took my camera to the last one to get some pictures but the battery was dead. That has been my luck lately.
Alexis just keeps busy with her normal stuff. Nothing new there.
Sierra is officially a driver (with a learner's permit that is). She is pretty excited about that. Now we just need to get in those driving hours.
We got snow last week but of course it was gone by noon. It doesn't stick around very long.
We have been busy working on Christmas projects and getting ready for the season.

Apple Cider Syrup
So, stop by her website here and check out all her wonderful recipes. Then, go make some of this today, you won't be disappointed.
Apple Cider Syrup
3/4 cup sugar
1/4/ cup brown sugar
2 Tbsp. cornstarch
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 cups apple juice or cider
1 Tbsp. fresh lemon juice
1/2 tsp. vanilla
1/4 cup butter
Mix sugars, cornstarch, cinnamon and nutmeg well. Add apple juice (cider) and lemon juice. Bring to a rapid boil for 1 minute, stirring constantly. Remove from heat and stir in butter and vanilla. After use, store refridgerated in a lidded container (canning jar works great). Use within 1 week.
**Try topping with chopped apples and/or pecans.

Balloons Aloft
This is what we patiently wait for all year long - the skies filled with balloons and the chill in the early morning. Well, ok, maybe we don't wait the for chill but when the balloons are up, we know that fall is here.

A really yummy cake
Pineapple Coconut Cake
1 box yellow cake mix (with pudding)
Mix and bake as directed on box. About 5 minutes before done, boil (1) 20 oz can crushed pineapple & 1 cup sugar for 5 min. Remove cake from oven and poke full of holes. Pour hot pineapple mixture over hot cake. Best to do several hours before planning to serve.
When cooled, mix one large box of instant vanilla pudding as directed. Spread over cake. Sprinkle with coconut. Let set up. Then spread one small carton of Cool Whip over top of pudding . Top with toasted coconut and/or chopped nuts.

A wall redo
So I bought a new shelf (Hobby Lobby), painted the picture frames black and added a few accessories that I already had and didn't know what to do with them. What do you think? Any ideas are welcome. I still feel like it needs something just don't know what.

A summer refreshment
Frozen Strawberry Lemonade
2 cups crushed ice
12 oz. frozen lemonade concentrate
1 cup water
1 - 16 oz pkg frozen strawberries
Place crushed ice, water & lemonade concentrate in blender. Process until ice is finely blended. Add strawberries and puree until well blended. Tase and adjust flavors if desired.
** Fresh strawberries also work well.
** We like to put ours in the freezer for an hour or so

Our favorite bread recipe
Ninety Minute Bread (sorry no picture)
(By Jessie Evans Smith – This recipe was Joseph Fielding Smith’s
favorite bread)
4 cups warm water
7 – 8 Cups flour – (I use as much more flour as needed)
4 yeast cakes (4 Tbsp Dry yeast)
4 tsp. Salt
8 Tbsp sugar
4 Tbsp melted shortening - I like to use butter flavored Crisco
Dissolve yeast in one cup of the warm water with 1 of the Tablespoons of sugar. Mix rest of ingredients. Mix into a soft but not sticky dough. Cut into four pieces and let stand 15 min. Using rolling pin, pound each piece of dough for 1 minute. Form into 4 loaves and put each loaf into a greased bread pan. Let stand 30 minutes. Bake at 400◦ F for 30 minutes.
PS - my pans are the bigger ones so I usually end up with only three loaves. I've also tried it with 1/2 wheat and 1/2 white flour and it turns out pretty good.

I'm still here...
Jake finished up his basketball season last saturday. His team finished 1st in the regular season but not so good in the playoffs. After the game it was time to head to his flag football game. Not such a good result there either. Do I dare say that his team has had a perfect season so far - all losses. But he is having a good time.
Alexis has her dance competition this saturday- pictures later. She is a little nervous about the whole thing because she is going to end up doing the dance by herself. The other girl she was suppose to compete with broke her leg a couple weeks ago. I'm sure she will be fine.
The kids have been out of school this week for spring break. They will be home all this week and will head back on Monday.
Between sports and dance practices, church activites and everything else, life is good.
